Game Day Recipes: The Buffalo Bills vs. The New York Jets

What is a great football game without a great snack and refreshments? Nothing. The game should be treated with respect, and it's deserving of a quality munchie.

Like the Bills this week, I am going to keep this week’s recipe simple. It’s about fundamentals. It’s about tackling. It’s about taking the easy completions. Not every game day snack needs to be foie gras. No, this week I am suggesting an easy recipe that anyone can do, but it will be tasty like the Buffalo Bills victory in New Jersey!

Buffalo Sauce Popcorn with a Hazy IPA

Ingredients:

  • Popcorn seeds (no bagged popcorn)
  • Frank’s Red Hot Sauce
  • Butter
  • Worcestershire Sauce
  • Garlic Powder
  • Cayenne Petter
  • Chili Powder
  • A Hazy IPA of your choice

Yes, the snack is just popcorn, but if you haven’t tried this, you will be surprised at how delicious such an affordable snack can be, and the nice thing is, anyone can make it.

Step 1: Pop

Use your air popper to pop your fresh popcorn. DO NOT use bagged popcorn. People who use bagged popcorn share a large portion of a Venn diagram with those that put ranch on their wings. Don’t be that guy.

“But I don’t have an air popper!” you say. Get one. They’re cheap. But if you’re financially so limited, use the Alton Brown method for popping fresh corn. Now you have no excuses.

Once your popcorn is popped, add some salt, but not too much, and put it off to the side. We are ready for the next step!

Step 2: Sauce it up!

In a small saucepan set to medium low heat, add equal parts butter (not margarine … unless you hate yourself) and Frank’s Red Hot Sauce. Do not use Tabasco. It is the Jalen Ramsey of hot sauces: trash.

Once the butter is melted and stirred together into a nice orange sauce, turn the stove to low and continue to mix. Add some garlic powder (not garlic salt) to taste as well as some chili powder and as much cayenne pepper as you can handle. Finally, add a few drops of Worcestershire (pronounced “wuss terr sure”) sauce to add a tiny bit of a meaty/umami quality.

Step 3: Let cool some and shake!

Turn off the stove and let the sauce cool just a little. If it’s too hot, your popcorn quantity will be cut in half, but if it’s too cool, the ingredients will begin to separate. Once the sauce has cooled a little, pour it over the popcorn in a large bowl.

Place a lid or plate over the bowl and shake it like a polaroid picture (nice ref, eh?) for good uniform coverage.

Step 4: Crack open the brew!

I find a nice hazy IPA is a nice pairing with spicy foods. The IPA offers a refreshing bitterness to counter the heat and spice of the popcorn. Be sure to have plenty of these on hand, as there is no reason, NO REASON, to have to make a beer run during the game. That would just be a waste.

And if a friend tells you they’re running late to watch the game, they need to bring more beer. It’s the only just thing to do.

Step 5: Snack, sip, win.

Get your popcorn bowl situated for ideal television viewing along with your IPA. If it’s a fancy IPA, use a glass, you Philistine! The nose will help you appreciate the complexity of the beer.

Snack away as the game begins, and share if you like, but I don’t share. GET YOUR OWN! Snack, sip, and yell at the screen this Sunday until the Buffalo Bills emerge victorious over the wretched and contemptible New York Jets.
